Víkendová rána volají po dokonalé snídani. Pro někoho slaná, pro někoho sladká. Pro mě určitě sladká. Vafle patří spolu s lívanečky a palačinkami k oblíbeným sladkostem a v poslední době se k nim často vracím. Tentokrát jsem zvolila kynuté vafle, na které je potřeba trochu více času, ale skutečně stojí za to.



A i když je miluju jen tak s marmeládou a se šlehačkou, dost často je servíruju s jogurtem a ovocem. Tentokrát jsem jogurt smíchala s trochou mascarpone a smetany, špetkou vanilky a javorovým sirupem. Ovoce je nejlepší čerstvé, ale protože jsem chtěla spotřebovat borůvky z mrazáku, připravila jsem z nich rozvar s troškou kokosového cukru a kardamomu.

KYNUTÉ VAFLE S JOGURTOVÝM

KRÉMEM A BORŮVKOVÝM 

ROZVAREM



INGREDIENCE

(cca 10 ks podle velikosti vaflové formy)

 

VAFLE


250 g hladké mouky

1 lžička instantního droždí

2 lžíce třtinového cukru

300 ml vlažného mléka

½ lžičky vanilkového extraktu

100 g rozpuštěného másla

2 bílky

špetka soli

olej na formu

 

 


BORŮVKOVÝ ROZVAR

 

250 g borůvek (použila jsem lesní)

2 lžíce kokosového cukru (můžete použít i med)

½ lžičky kardamomu

½ lžičky vanilkového extraktu

1-2 lžíce vody

  


JOGURTOVÝ KRÉM

 

250 g řeckého jogurtu

2 lžíce mascarpone

2 lžíce smetany ke šlehání

½ lžičky vanilkového extraktu

2 lžíce javorového sirupu

 

 


 

POSTUP



 

VAFLE


 

1.      Nejprve si rozpustíme v menším kastrůlku máslo a necháme vychladnout na pokojovou teplotu.

2.    Do mísy nasypeme droždí a cukr, zalijeme trochou vlažného mléka a pomocí vařečky mícháme, dokud se cukr i droždí nerozpustí.

3.      Postupně přilijeme zbytek mléka a rozmícháme.

4.      Přidáme mouku, sůl, vanilkový extrakt a vypracujeme na hladké těsto.

5.      Odstavíme a necháme 20 – 30 minut odpočinout.

6.  Jakmile je těsto vykynuté, zapneme vaflovač a necháme dostatečně rozehřát (postupujeme podle pokynů výrobce).

7.  Vychladlé máslo vmícháme do těsta. Z bílků se vyšleháme se špetkou soli pevný sníh a poté opatrně vmícháme do těsta.

8.  Plotýnky vaflovače postříkáme sprejem na vymazávání nebo potřeme olejem. Na rozehřátou plotýnku naneseme dostatečné množství těsta, přiklopíme a pečeme dozlatova. Doba pečení záleží na vaflovači, ale většinou se pohybuje od 3 – 5 minut.

9.     Jakmile jsou vafle hotové vyndáme je a necháme vychladnout.


 

 

BORŮVKOVÝ ROZVAR


 

1.     Borůvky dáme do menšího kastrůlku, přidáme vodu, cukr, vanilkový extrakt a kardamom.

2.  Necháme povařit na mírnějším stupni, aby pustila šťáva. Směs necháme probublávat, aby se tekutina zredukovala na hustší sirup.

3.      Trvá to cca 10 – 15 minut (podle množství vody a šťávy puštěné z borůvek).


 

 

JOGURTOVÝ KRÉM


 

1.     V misce smícháme jogurt s mascarpone, vanilkovým extraktem a javorovým sirupem. Prošleháme metličkou.

2.      Nakonec přilijeme smetanu a vyšleháme do hladkého krému.



DOKONČENÍ


 

1.      Můžeme podávat za tepla i za studena.

2.      Vafle naservírujeme na talíř. Na každou vafli rozprostřeme jogurtový krém a přelijeme borůvkovým rozvarem.

SOURDOUGH WAFFLES WITH YOGURT

CREAM AND BLUEBERRY SAUCE

 


Weekend mornings call for the perfect breakfast. Savory or sweet. Sweet for me, definitely. Waffles, along with pancakes are our favorites and I have been returning to them lately. This time I chose sourdough waffles, which require a little more time, but it's worth it.


And even though I just love them with jam and whipped cream, I often serve them with yogurt and fresh fruits. This time I mixed yogurt with a little mascarpone and cream, a pinch of vanilla and maple syrup. The fruit is best fresh, but because I wanted to consume blueberries from the freezer, I prepared a broth with a little coconut sugar and cardamom.

 


INGREDIENTS

(About 10 pcs depending the size of waffles)


WAFFLES


250 g all-purpose flour

1 teaspoon instant yeast

2 tablespoons cane sugar

300 ml lukewarm milk

½ teaspoon of vanilla extract

100 g melted butter

2 egg whites

pinch of salt

oil to spray the tin

 

 

BLUEBERRY SAUCE

 

250 g blueberries

2 tablespoons coconut sugar (or honey)

½ teaspoon cardamom

½ teaspoon of vanilla extract

1-2 tablespoons water

 


YOUGURT CREAM


250 g Greek yogurt

2 tablespoons mascarpone

2 tablespoons whipped cream

½ teaspoons of vanilla extract

 

 



PROCEDURE


 

WAFFLES



1.      Melt the butter in a small saucepan and let it cool to room temperature.

2.     Put yeast and sugar into the bowl, pour a little lukewarm milk and stir using a wooden spoon until the sugar and yeast dissolve.

3.     Gradually add the rest of the milk and stir.

4.      Add flour, salt, vanilla extract, and work into a smooth dough.

5.      Put aside and let rest for 20-30 minutes.

6.  Once the dough is leavened, turn on the waffle maker and let it warm up sufficiently (follow the manufacturer's instructions).

7.   Stir the cooled butter into the dough. Whip the white eggs into the snow with a pinch of salt and then carefully mix into the dough.

8.     Spray waffle plates or wipe with oil. Apply enough dough to a hot plate, close and bake until golden. Baking time depends on the waffle maker, but usually ranges from 3 to 5 minutes.

9.      Once the waffles are ready, take them out and let them cool.


 

 

BLUEBERRY SAUCE


 

1.      Put blueberries in a small saucepan, add water, sugar, vanilla extract, and cardamom.

2.      Cook on a low level to release the juice. Let the mixture simmer to reduce the liquid to a thicker syrup.

3.      It takes about 10-15 minutes (depending on the amount of water and juice released from the blueberries).


 

 

YOUGURT CREAM


 

1.      In a bowl, mix the yogurt with mascarpone, vanilla extract, and maple syrup. Whip with a whisk.

2.      Finally, add the whipped cream and whisk into the smooth cream.


 

 

 

FINISHING


 

1.      We can serve hot or cold.

2.      Serve the waffles on a plate. Put yogurt cream on each waffle and pour over the blueberry sauce.
